Originally from Compostela, Manuel opened El Canario in Chapela, quickly turning it into an absolute reference for gastronomy and social life in Rías Baixas.
He pioneered the introduction of seafood at grand celebrations, bringing the tradition of accompanying banquets with up to seven varieties of seafood —a trend that today is a hallmark of our land.
His vision allowed him to achieve historic numbers. Long before the term "catering" became professional, Manuel was already ahead of his time.
